A good chef's knife rarely fails without warning. Tomatoes start tearing instead of slicing. An onion needs more pressure. Herbs bruise under the blade. Before you assume the knife needs sharpening, learn how to hone kitchen knives. In many cases, the edge is still there. It has simply drifted out of alignment.

Honing Is Not Sharpening

Start with a clean, dry knife and a stable honing rod. A traditional steel rod, ceramic rod, or fine diamond rod can work, but they do not behave the same way.
