A sharp knife should move through a ripe tomato without crushing it. It should portion proteins cleanly, slice herbs without bruising them, and make prep feel controlled. Professional sharpening can be the right choice for expensive knives, damaged edges, or cooks who do not want to learn stones.
How often should you sharpen? It depends on the knife, the surface, and how often you cook. A home cook using an edge-friendly board, sound technique, and proper storage may need true sharpening only a few times a year. If your knife needs sharpening every few weeks, look upstream. The board and the habits around it are usually telling the story.
